Chicken dinner

Ingredients

10 ounceschicken, cut into 1‑inch pieces (breast is best for this dish)
2 tablespoonsoil
4 clovesgarlic, chopped
1large onion, chopped
1bell pepper (green, red, or yellow), sliced
4 ouncesseedless grapes, sliced
4 ouncescantaloupe, cut into cubes
1 ouncemaple syrup
1/4 teaspoonblack pepper

Directions

Heat oil in a large sauté pan; add chicken and sauté 3 to 5 minutes. Once the chicken starts to brown, add onion and sauté for 3 minutes; then add garlic and sauté about 1 minute. Stir everything well.

Add bell peppers and sauté about 2 minutes; add grapes, cantaloupe, and black pepper. Stir. Place lid on pan, lower heat to simmer, and cook about 15 minutes.

Add syrup and cook uncovered about 5 to 10 minutes.

Serve over thick multi-grain bread or brown or wild rice.
