10 ounces | chicken, cut into 1‑inch pieces (breast is best for this dish) |
2 tablespoons | oil |
4 cloves | garlic, chopped |
1 | large onion, chopped |
1 | bell pepper (green, red, or yellow), sliced |
4 ounces | seedless grapes, sliced |
4 ounces | cantaloupe, cut into cubes |
1 ounce | maple syrup |
1/4 teaspoon | black pepper |
Heat oil in a large sauté pan; add chicken and sauté 3 to 5 minutes. Once the chicken starts to brown, add onion and sauté for 3 minutes; then add garlic and sauté about 1 minute. Stir everything well.
Add bell peppers and sauté about 2 minutes; add grapes, cantaloupe, and black pepper. Stir. Place lid on pan, lower heat to simmer, and cook about 15 minutes.
Add syrup and cook uncovered about 5 to 10 minutes.
Serve over thick multi-grain bread or brown or wild rice.
