1 pound | fresh pork, ground |
1 | garlic clove, minced |
Salt and pepper to taste | |
1 | orange, juice and zest (1/4 cup approximately) |
2 tablespoons | olive oil |
1 1/2 tablespoons | low-sodium soy sauce |
1 1/2 tablespoons | agave honey |
1 tablespoon | fresh cilantro, chopped |
1 | chili serrano, New Mexico chili, or jalapeño pepper, sliced (if you want it mild, remove the veins and seeds and cut it into very small pieces) |
In a deep bowl, combine the pork and garlic and season lightly with salt and pepper.
Using your hands, form 10 to 12 meatballs like making miniature hamburgers.
Meanwhile, in another deep bowl, mix the juice and the zest of the orange, honey, soy sauce, and chili (optional) and set aside until Step 5.
Heat the olive oil in a sauté pan over medium-high heat, then add the meatballs to the hot oil and cook on one side for 2 minutes.
Turn them over and add the sauce to thicken while cooking the meatballs. Using a spatula or wooden spoon, scrape the bottom of the pan to remove anything sticking to help the sauce to thicken. Cook for another 3 minutes, reducing the temperature if necessary.
Add the cilantro and serve immediately.
