| 4 cups | cubed seedless watermelon |
| 1 1/2 cups | cold water |
| 1/2 cup | fat-free lemon sorbet |
| 2 teaspoons | grated lemon zest |
| 1 tablespoon | fresh lemon juice |
| 4 | fresh mint leaves, plus more for garnish |
| Lemon slices, for garnish (optional) |
In a food processor or blender, blend watermelon, water, sorbet, lemon zest, lemon juice and mint leaves until very smooth. Cover and refrigerate until thoroughly chilled, at least 1 hour. Shake well and serve over ice in tall glasses, garnishing with lemon slices and mint leaves.
