Watermelon cooler


4 cups cubed seedless watermelon 
1 1/2 cups cold water 
1/2 cup fat-free lemon sorbet 
2 teaspoons grated lemon zest 
1 tablespoon fresh lemon juice 
4 fresh mint leaves, plus more for garnish
  Lemon slices, for garnish (optional)


In a food processor or blender, blend watermelon, water, sorbet, lemon zest, lemon juice and mint leaves until very smooth. Cover and refrigerate until thoroughly chilled, at least 1 hour. Shake well and serve over ice in tall glasses, garnishing with lemon slices and mint leaves.
